Date Squares

Dates were one of those things I detested as a child — like beets and coffee — but as an adult, I relish.

Now, date squares are one of my favourite afternoon snacks but knowing how butter finds its way into the standard recipe, it tends to be an infrequent indulgence. So I did some Google snooping for a low-fat alternative.

Credit goes entirely to BigOven.com for this recipe. An 18th of the recipe has 4 grams of fat.

I will mention that when made with regular oats (versus the quick-cook style the recipe calls for), these are a bit dry and thus best served warm (I zap ’em for 30 seconds in the microwave and serve with plain yogurt and bananas). They also freeze really well!

Honey-Date Squares

Filling

3/4 cup pitted dates
1/4 cup raisins
1 cup water
1/4 cup honey

Crust

2 cups quick-cooking oats
1 cup unbleached white flour
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground ginger
1/8 tsp ground nutmeg
1/4 tsp salt
1/2 cup honey
1/4 cup safflower (or canola) oil
1/4 cup applesauce
1 tsp vanilla extract

Let’s do this:

  1. Preheat oven to 350*F. Lightly oil a 9″ baking pan.
  2. Combine dates, raisins and water in saucepan over medium heat; simmer 10 minutes or until fruit has really softened. Drain but save the liquid!
  3. In a blender/food processor, puree fruit with the honey adding the reserved liquid to create a spreadable consistency. Set aside.
  4. In a large bowl, combine all other ingredients. Stir well then divide in two parts, one a bit more than the other. Press the larger half into the pan for the crust.
  5. With spatula, spread fruit filling over crust to the very corners.
  6. Add a bit extra flour to the remaining dough and mix into a good crumble. Sprinkle this all over the fruit filling.
  7. Bake 25 to 30 minutes, until golden brown.
